Cold Skin

For the last three days I've had 凉皮(liangpi), cold skin, for dinner. A Xi'an specialty, when Drew and I were in Xi'an we had the most delicious liangpi I've had. Still looking for some in Dalian that match the quality. So what is this delicious dish?

The noodle is made from rice flour, very thin a little bit bigger than a vinyl record. Chopped into pieces. The noodle

other ingredients include majiang(ground sesame seed paste), lajiang(spicy oil), vinegar, sugar, salt/msg, shredded cucumber, and often another type of noodle that looks like a sponge, and is yummy beause it soaks up the sauce.

A couple a pictures that don't quite do the dish justice, but looks are not always important...
